The concept for Blackbelly started with its owner, Hosea Rosenburg. Hosea's vision started with a butcher shop and market where he could sell his specialized meats and sandwiches during the day, while his staff used the catering kitchen in the back to stock Blackbelly's food truck and catering events. During the evenings, the space evolves into an expedition kitchen where he can serve his famous meals while socializing with his many admiring fans and the back bar serving its award-winning cocktails.

 

Upon entry, we created an open market defined by a wood-planked vaulted ceiling and white mosaic tiled flooring. Two reclaimed boxcar flooring tables create a casual place where shoppers can enjoy their meals. The market and dining room are divided by a custom meat-curing refrigeration unit to show off the aging meats. The dining room tables were kept open so they could be moved around during larger dinner parties or events. The back bar wall is lined with antiqued mirrors reflecting light from the clearstory windows above and layered with custom up-light shelving illuminated with liquor bottles and glasses. The display kitchen wanted to be the highlight in the space. The shelving overhead houses the many assorted picked goods and a collection of cookbooks and cooking tchotchkes Chef Hosea has collected.

Blackbelly Market and Butcher Shop is defined by its name, from the Shou Sugi Ban charred wood walls to the meats hanging in the middle of the restaurant. It's more than a butcher shop but a neighborhood eatery that comforts locals and the world traveler just wanting a glance into the world renowned chefs kitchen.
